Jack and Beth Derby have been operating Derby Farms, located outside of La Vernia TX for 12 years. Four years ago, we purchased a freeze dryer for personal use. We produce fresh fruits and vegetables and struggled to keep the produce fresh enough to consume in a timely manner. Freeze drying was the perfect solution. Three years later we started operating as Derby Farms Sweet Shoppe and ultimately became Derby Farms Sweets and Eats. We enjoy offering real food to the public. Fresh produce makes the perfect healthy snack, is wonderful to have preserved bags (with no preservatives) on the shelf for quick and easy use and eliminates the issue of wasting produce. Depending on the time of year, we offer home grown and organic produce. We also combine with commercially purchased produce as needed with organic being a priority when possible.
